Waffles are Wonderful

Waffles used to be a novelty that we only made once in a great while. The waffle iron was left in relative peace and quiet in the dark corner of the cupboard.

But things are different now. We have discovered how much fun waffles are! And when you have two waffle irons in operation, no one has to wait very long at all for their next waffle.

I experimented with various waffle recipes, looking for just the right texture combined with all the best healthy ingredients. But what I finally discovered is that I love buying the box of Krusteaz Belgian Waffle mix for $2 from the store. One whole box makes more waffles than we can eat at one time, which means we have leftover waffles to munch on until lunchtime. Even if buying a pre-made mix isn’t the most economical or healthy option, I figure that it’s still a wonderful deal to feed the whole gang for $2. And as far as being as healthy as possible… well… I guess we’ll just have to make up for it in other ways.

One of my favorite ways to eat these waffles is just hot and plain, right off the griddle, without syrup or butter or anything else on them. Of course, they are yummy with syrup or honey or butter, too. But one day, when I wanted to make a special treat for the children, I bought ice cream and mashed up some fruit with sugar and we had little waffle sundaes. Wow! What a gourmet item! Hot waffles, melting ice cream, with fruit sliding down the mound of ice cream… Yum!

I saw a recipe suggesting that one could use cooked waffles as the “bread” for making a grilled ham & cheese sandwich. I want to try that sometime and see if it’s yummy. Sounds good to me! I’ve also read some suggestions for other things that you can cook on a waffle iron. For a long time I’ve thought that it would be fun to have a George Foreman indoor grill, but maybe my waffle iron is just as good…or better!

    We have a 22 year old belgian waffle iron - Rick makes wonderful waffles using a Jiffy Corn Muffin Mix. A little chewy!

    When I lived in Pennsylvania with Don’s parents I was introduced to church suppers which advertised - Chicken and Waffles. It ended up being creamed chicken over waffles.

    I had a hard time getting past my experience which was a bit more traditional. I actually like waffles with just butter, no syrup.

    Another thing that they did which was different was that they used syrup on their scrapple and I was raised with catsup on scrapple.

    I am looking forward to sharing waffles with you all when I get to Illinois.

    I have been a voyer far too long! I just have to comment on”waffles”!

    My dad made the best ones, while I was growing up, with a waffle iron that you put right on the stovetop. We had them for dinner or breakfast- just the “usual” way with syrup. My siblings and I tried to convince him to try some “alternate” recipes from a Walt Disney cookbook we received, but “Tweedle Dumm and Tweedle Dee’s Peanut Butter and Jelly Waffles” just didn’t appeal to him. (I wish I knew where this cookbook was now!)

    It was only fitting that Bill and I received an electric waffle maker from him shortly after we were married. We have tried to be a little more “adventurous” with our waffles, however, our favorites usually include nuts and/or fruit. Applesauce on top, strawberries with whipped cream on top, blueberries in the batter, chopped nuts in the batter- just to name a few. Maybe it was the timing, but my absolute favorites were at a restaurant in Estes Park, CO during our honeymoon- wild blueberry and pecan waffles!
